Chez Panisse, The Cheeseboard, and Culinary 'Jamming' Sessions

At the Cheeseboard, the most 'happening' pizza place and bakery in the Bay Area, we tasted Buffalo Cheese and checked out their walk-in ovens!

Chez Panisse handles all their own meats - beginning by preparing the entire animal, separating the desired cuts from the bone and even grinding their own beef, as can be seen from the photo. 'Down Time' while the cake is baking ...

The kitchen at Chez Panisse. Chez Panisse is divided into two parts - the upstairs Café and the downstairs fixed menu. Both, however, use the same main kitchen. In the morning, the upstairs crews prepares their dishes while the downstair crew comes in during the afternoon and begins their own preparations.
